I am sitting here stuffed with the best leftovers ever!  Thanksgiving was very intimate with just me & Tom along with daughter Tara and her two children & husband. 

 

We ventured out to the garden because I thought Gianna (3 year old granddaughter) would think it was fun to pick a carrot.  I could not have been more wrong!  She’s a city “princess” and didn’t want to get her hands dirty. 

The garden is far from attractive at the moment.  It even has a bit of an off odor.   We ended up picking a basketful of beets and carrots to roast for dinner.  Those roasted roots were almost the star of the party.   The brined turkey with herbed butter bath WAS the star! YUM!!!

 

Having the freezer and pantry full of the summer’s bounty makes hosting healthy meals a cinch.  Each evening during the previous weeks we had a home grown vegetable for dinner.  Cauliflower, brocoli, green beans, beets….   My grandson, Anthony, would eat a jar of dilly beans each day all by himself if he had permission.  He taste tested as many different items as I would open.  The pickles, pie filling, salsa and jams were his favorites.  I think he spit out the pickled crab apples though. 

 

Two pumpkin pies were made from some fresh-frozen pumpkin from a fellow food preserver’s garden.  Thanks Peggy!  The best pumpkin pie I’ve ever made!  Even better than the one that won BEST PUMPKIN PIE award a couple years ago.
